Ingredients -1 pound beef stew meat -1 onion, diced -1 carrot, diced -1 celery stalk, diced -3 cloves garlic, minced -1 teaspoon dried thyme -1 bay leaf -4 cups beef broth -2 tablespoons tomato paste -Salt and black pepper, to taste -Optional: 1 tablespoon all-purpose flour instruction In a large Dutch oven or pot over medium heat, brown the beef stew meat in batches. Transfer the browned meat to a medium bowl. Add the onion, carrot, celery stalk, garlic, thyme and bay leaf to the pot and sauté until softened. Pour in the beef broth and tomato paste and bring to a simmer. Season with salt and black pepper, if desired. Cover the pot and simmer for 2 hours or until the beef is very tender. Discard the bay leaf. Serve hot.
